We had a lot of chicken leftover so I took one container and made this. It ended up being really easy and just one pan, which is a huge plus if you ask me.
You could add in other vegetables or some cheese on top at the end.

Ingredients:
10 oz chicken (about 2 large breasts)
1 bell pepper
1 onion
1 can black beans (drained, rinsed)
1 cup rice (uncooked)
4 cups sweet potato (one large, cut into cubes)
1/2 tsp chili powder
1 tbsp garlic powder
1 tbsp dried thyme
Salt and pepper to your taste
2 cups chicken broth

Directions:
Preheat the oven to 375 degrees
Spray a 9x13 baking dish
The chicken should be cut and placed on the bottom of the pan
Layer the pepper, onion, beans, rice, sweet potato, and seasonings
Pour the chicken broth over the entire pan
Cover in tin foil
Bake for 45 minutes
Uncover and bake another 15-20 minutes
More flavoring could be added once it’s done cooking.
Could top off with cheese, sour cream, lettuce, or avocado.
