Chicken Spinach Bake

A friend of ours first introduced us to a version of this chicken bake. Over time, it has morphed into this which for me is easier and takes fewer pans and less prep time. It's a huge favorite with my husband.



INGREDIENTS:

  • 5-6 Chicken Breasts

  • Himalayan Salt

  • Black Pepper

  • Italian Seasoning

  • Garlic Powder

  • 8 oz full-fat cream cheese

  • 1 container fresh Spinach

  • 2 cups shredded cheese

INSTRUCTIONS:


Preheat oven to 400 degrees



Line a 9x13 baking dish with parchment paper (you can skip this but the pan is very messy when it’s all done)


Spray with avocado oil (or whatever your choice of oil is)


Place chicken on the single layer on the bottom of the pan


Add your seasonings to the top of the chicken



Use a knife and spatula to cut off pieces of the cream cheese and cover the chicken (you can get fancy and warm up the cream cheese for easier spreading but I slice it and place it).



Wilt the spinach on the stovetop with just a tiny bit of oil before adding to the top of the cream cheese. Adding the spinach cold will leave it crispy and lots of water in the pan when it's finished.


Top the spinach with shredded cheese. (We smoke our own cheese blocks with the Traeger and shred them. Any shredded cheese can be used.)


Put in the oven uncovered for 30 - 40 minutes. Cook until internal temp of 165 degrees.


After cooking the cream cheese can be pressed down with a fork if it is not melted all the way.
