A delicious and moist gluten-free banana bread occasionally makes for a nice treat, especially with my homemade organic vanilla extract.

INGREDIENTS
1 1/2 cup cassava flour
1 teaspoon baking soda
1/2 teaspoon sea salt
1/4 teaspoon ground cinnamon
3 ripe bananas, mashed
1/3 cup avocado oil
1/3 cup pure maple syrup
3 organic eggs
2 teaspoons vanilla extract
3 tablespoons oat or almond milk
INSTRUCTIONS
Preheat oven to 350 degrees.
In a large bowl, mix the dry ingredients: cassava flour, baking soda, salt, and cinnamon.
Create a well in the center of the dry ingredients and add the wet ingredients: mashed bananas, oil, maple syrup, eggs, vanilla extract, and milk.
Whisk together until combined.
Pour the batter into a prepared standard loaf pan and bake for about 40 minutes or until a toothpick comes out clean.
Allow the bread to cool a bit before removing it from the pan.
Store in an airtight container.
