Gluten-Free Banana Bread

A delicious and moist gluten-free banana bread occasionally makes for a nice treat, especially with my homemade organic vanilla extract.




INGREDIENTS

  • 1 1/2 cup cassava flour

  • 1 teaspoon baking soda

  • 1/2 teaspoon sea salt

  • 1/4 teaspoon ground cinnamon

  • 3 ripe bananas, mashed

  • 1/3 cup avocado oil

  • 1/3 cup pure maple syrup

  • 3 organic eggs

  • 2 teaspoons vanilla extract 

  • 3 tablespoons oat or almond milk







INSTRUCTIONS


  1. Preheat oven to 350 degrees.


  2. In a large bowl, mix the dry ingredients: cassava flour, baking soda, salt, and cinnamon.


  3. Create a well in the center of the dry ingredients and add the wet ingredients: mashed bananas, oil, maple syrup, eggs, vanilla extract, and milk.


  4. Whisk together until combined.


  5. Pour the batter into a prepared standard loaf pan and bake for about 40 minutes or until a toothpick comes out clean.


  6. Allow the bread to cool a bit before removing it from the pan.


  7. Store in an airtight container.
